Japanese Mushroom Spaghetti

200g of spaghetti300g Japanese Mushrooms egEringiMaitakeshimejiEnoki etcOr any mushrooms that are available2 Garlic Cloves1 tbsp soy sauce180ml white wine1 tsp konbu (kelp) dried dashi (or other dashi)1 tbsp olive oil for sauteeingpepper to tasteshreadded nori (optional)
Makes 2 servings
1. Cook the spagetti as instructed, rinse and drain and leave aside.
2. Mince the garlic finely, and cut the mushrooms into bite size pieces.
3. Heat oil in a large pan, and add garlic and mushrooms to sautee on a medium heat.
4. Add white wine, and turn heat down and let it simmer and reduce for 5-10mins.
5. Add soy sauce, dashi and pepper.
6. Mix cooked spaghetti through the mushroom sauce and reheat througly.
7. Add shreadded nori before serving (optional).
