Grilled Veggie Pasta-Penzey Spices

1lb. dry penne pasta2lbs. fresh garden vegetables-your choiceThey used:1 small green zucchini1 small yellow zucchini1 large red onion1 red bell pepper1 yellow bell pepper1 small eggplant1 6oz. package of whole button mushrooms1/4 cup + 2TB. olive oil, divided1-2 TB. Pasta Sprinkle-from Penzey's Spices OR Italian Seasoning1/2 tsp. granulated Garlic, divided1/2-1 tsp. ground pepper1/4-1/2 tsp. salt1-2 TB Balsamic or Red Wine Vinegar1 serving = 1 cup
Cook pasta accordingly. And drain.
Cut up veggies, put on skillet/ grill. Add all other ingredients to marinate in veggies. Add to pasta and serve.
