Cindy's Curried Red Lentil Soup

Ingredients
Satue in 1 Tbsp of Coconut Oil:3 chopped garlic cloves1 chopped onion1 large carrot, shredded1/2 tbsp chopped fresh gingerpinch of cayenneThen add:6 cups water1 can lite coconut milk1 cup red lentils3/4 c brown rice
Directions
Saute first ingredients then add second set of ingredients. Bring to boil then turn down to simmer. Simmer till rice is cooked. (Approx 40 min.) then let simmer about an hour more to let all the flavors blend and allow soup to thicken a bit.

Garnish with cilantro and scallions when serving.
