Tuna patties

Ingredients
9 ounces tuna in water, drained (should be like 3 packets)About 1/3 cup egg beaters--up to 1/2 cup if needed to make all ingredients bind together.4 leaves of basil chopped up1/2 cup chopped red pepper2 slices onion, chopped upsalt and peppper1 T lemon juice1/4 c bread crumbs (plain or your choice of flavor)
Directions
Cook the peppers and onions and allow to cool. Then mix all ingredients together well in a bowl. Divide into 10-12 tightly packed patties. Brush the tops of the patties with a little olive oil. Heat a pan and place oiled-side-down. While that side browns, brush the other side with just a little more oil. After about 3-4 minutes, gently flip and brown the other side. (If they stick a little, I use a spatula to wiggle underneath and a wooden spoon on top for a little extra stability). After they're browned on both sides, I pop them in the oven or the toaster oven for about 10 minutes at 350. This removes any residual sogginess from the eggs. Then they can be tossed into ziplock bags for lunches. I eat these at room temperature but they'd be good warm with some tartar sauce too.
