The sauce on this recipe is to die for! I did add 1 tsp of chili powder and 1/2 tsp of cumin to give it a little more Mexican flavor but other than that I made it as is. One of my sons who normally hates Mexican really loved this one. - 8/2/11

This is the first time I've made enchiladas, but they were fanstastic! I will definatley be making these again. The only thing I changed was I substituted low fat/fat free/ low sodium versions of the ingredients just to make them a bit healthier. Absolutley Awesome!!!! :D - 9/17/09

WOW! My kids 5 and 7 devoured these. I used leftover chicken and pork loin with mexican shredded cheese. They were fantastic. Definitely be on our menu from now on. - 2/21/08

This recipe is most tasty. I was not sure how well it would turn out, but once it had finished cooking and rested, it was very very good. I would share this recipe with my friends and family. - 8/28/07
