Spring Bruschetta

Ingredients
1 baguette (approximately 10.5 oz) French breadolive oil spray14.5oz (1 can) diced tomatoes, no salt1 tbsp Italian seasoning2 tsp garlic, minced4 oz goat cheese, soft40 leaves fresh basil
Directions
Heat oven to 400. Cut baguette into approximately 40 1/4" slices. Spray olive oil on both sides of slices. Place in oven for 6 minutes to toast.

While slices are toasting, mix tomatoes with Italian seasoning and garlic.

When slices are toasted, smooth 1 tsp of goat cheese onto slices. Then spoon 1 tbsp of seasoned tomatoes onto each slice.

Toast for 6 more minutes. Now add a leaf of basil onto each slice. Serve while still warm.

One serving equals 2 slices of bruschetta.
