12 oz dry elbow macaroni, cooked, rinsed and drained (Dreamfields makes this friendly for the carb-phobic)1/3 cup diced celery1/4 cup minced red onion (soak in cold water 5 minutes)1 Tbsp minced Flat leaf Parsley1/2 cup diced vine ripened tomato1/2 cup prepared light mayonnaise 3/4 tsp dry mustard1 1/2 tsp sugar1 1/2 Tbsp Cider Vinegar3 Tbsp Low Fat Sour Cream1/2 tsp Kosher SaltFreshly Ground Black Pepper to taste
In a large bowl combine elbows, celery, onion, parsley, and tomato. In a small bowl whisk together mayo, mustard, vinegar, sugar, sour cream and salt. Pour the dressing over the salad and stir to combine. Season with additional salt and pepper to taste.
