Honey Chicken Kabobs

Ingredients
3 large yellow peppers 1 large onion10 medium mushrooms2 chicken breasts, bone and skin removed1 tbsp olive oil1 tbsp honeyJuice of 1/2 a lemon
Directions
Mix olive oil, honey, and lemon juice well.
Cut up the chicken breasts into 3 inch slices and mix with the olive oil mixture. Let set for 3-4 hours.
Cut up the red onions into strips.
Place two pieces of bell pepper and two mushrooms with two pieces of the chicken in any order on the shish kabobs. Place onion strips throughout on the skewers.
Place on grill until cooked thoroughly (around 15 minutes) or you can broil them in your oven for around the same time.
Make sure that you rotate them as they are cooking.

    Rather than add extra calories by adding more honey. Use a darker honey. The darker the honey, the bolder the taste.

    If you want more flavor, add spices / herbs of choice to marinade. Did on G F grill, worked just fine. very nice summer recipe, but with an indoor grill, great any time. To one meal we added Chinese 5 Spice, to another meal we added Chili powder and Cumin, to another we added Turmeric and Curry. - 7/5/13

    Much too bland. Made over with a balsamic vinaigrette (bottled) and added zukes and canned artichoke hearts and cherry tomatoes-all of which I soaked in the marinade. Use 2 skewers side-by-side for more even turning. Veggies won't rotate on the skewer. - 7/6/13
