Ingredients
1 can Worthington Vegetable Skallops4 T oil2-4+ T Menudo Mix spice packet (includes any or all of: oregano, cumin, coriander seed, onion flakes, crushed red chili)1 huge can hominy1-1/2 huge hominy cans of water3 c red chile sauce or enchilada sauceGarnish: diced onion, lemon wedge, cilantro (optional)
Directions
Dice Vegetable Skallops into roughly 1/2" pieces. Heat oil in large stock pot. Add Skallops and saute with Menudo Mix. Add can of hominy, water, and red chile sauce. Heat to boiling and cook for 1-1/2 hours. Hominy should be tender. Garnish with lemon wedges, diced onion (raw), and cilantro (optional)
