Pumpkin Muffins

1 1/2 cups whole wheat flour1 tsp baking powder1/2 tsp baking soda1/2 teaspoon salt1 - 15 oz can of pumpkin2 whole eggs1/4 cup canola oil1/2 cup sugar1/2 cup SplendaSpices to taste (cinnamon, cloves, nutmeg, ginger, allspice)
Preheat oven to 350F, and line a muffin pan with liners.
Whisk together flour, baking powder, baking soda, and salt in a small bowl and set aside.
In a large bowl combine pumpkin, oil, eggs, spices, sugar, and Splenda.
Mix in flour mixture just until moistened. Dive batter between muffin cups.
Bake for about 25 minutes, until tops are golden. Serve as is, or top with cream cheese frosting.
