Margarita Chicken

2 boneless, skinless chicken thighslime juice- yield from 2 limestequila, 2 ouncesscallion- one large, choppedjalapeño- one pepper, seeded and choppedMonterey jack cheese- 2 oz, shreddedgarlic, 1 clove choppedsalt and pepper to taste
Mix juice of one lime, garlic, salt, pepper, and tequila. Place in bowl with chicken, and refrigerate at least 30 minutes.
Put chicken on grill, and sear on high heat for a minute on each side, then cook on indirect heat until cooked through- around 30 minutes. Turn regularly.
In sauce pan, add onion and jalapeño. Combine with rest of tequila/lime mixture and add juice of a second lime. Cook on low heat, covered, until liquid is pretty much gone. Spoon over top of chicken on plate.
Cover with cheese and serve hot.
