Fat-free Lentil Soup

Ingredients
1 medium onion, chopped3 stalks celery, diced1 large carrot, chopped1/2 tsp fresh minced ginger root2 large cloves garlic1 tsp ground coriander1 c brown lentils6 c water or broth
Directions
Put about 1/4 c of the broth in a soup pot and heat on medium-high. Add vegetables and sautee with the lid on for about 10 minutes, stirring frequently. Add the ginger, garlic, and coriander and cook for 1 minutes, stirring constantly. Add the lentils and water. Bring to a boil, then lower to a simmer for 45 minutes. Makes 6 1-cup servings.
