3 garlic cloves, minced1 small shallot, chopped1 Tbsp fresh rosemary, chopped1 Tbsp extra virgin olive oil1 Tbsp dijon mustard1 Tbsp lemon juice1 tsp lemon zest4 (1/4 lb) boneless, skinless chicken breasts1 tsp salt1/4 tsp black pepper
1. Combine the garlic, shallot, rosemary, oil, mustard, lemon juice and lemon zest in a zip-top bag; add the chicken. Squeeze out the air and seal the bag; turn to coat the chicken. Refrigerate, turning the bag occasionally, at least 2 hours or overnight.
2. Preheat the over to 450 degrees. Place the rack of a roasting pan in the pan; spray with canola nonstick spray. Remove the chicken from the marinade; discard the marinade. Transfer the chicken to the pan and sprinkle with the salt and pepper. Roast the chicken until cooked through, approximately 30 - 34 minutes or until an instant read thermometer registers 180 degrees.
