Smoked Salmon & Spinach Frittata

Ingredients
Egg, fresh, 3 largeEgg white, 3 Shallots, 1 tbsp chopped Olive Oil, 1 1tsp Spinach, fresh, 1 cup choppedPresident Fat Free Crumbled Feta, 1/4 cupFresh Chives, 1 tbsp chopped Smoked Salmon (lox), 4 oz Milk, nonfat, .25 cup Salt + pepper to taste(Tarragon or other desired herbs)
Directions
Chop shallots - saute in olive oil. Set aside to cool.

Chop spinach into 1 inch pieces.

Dice chives

Wisk 3 whole eggs + 3 egg whites + milk until fluffy (add salt and pepper if desired)

Add spinach, chives, cooled shallots, fat-free feta cheese (crumbled) to egg mixture and gently stir ingredients.

Pour into 8" round glass dish (pie plate or casserole) sprayed with non-stick cooking spray

Add smoked salmon to top of egg mixture, break into 1" chunks by hand.

Place in 325 degree oven for 25-30 minutes or until set.
Serve with side salad or chopped tomatoes and creme fraiche.

Makes 4 meal-size servings.

    Excellent, like the extra veggies and herbs, usually add dill as well. Have also just made it in skillet on stove top for one serving with all the same things in it just cut down in size more like an omelet then. I have one baking in the oven right now. Love smoked salmon anything! - 5/5/18
