Pasta with Broccoli Sauce

Ingredients
Directions
2 cups chopped broccoli1 cup vegtable brothfew sprigs of Italian parsley1 tablespoon tomato paste1 anchovy1 tsp olive oilsalt and pepper to taste250 grams pasta- about 1/2 pound
Chop parsley, garlic, and anchovy together and add to pan with olive oil. Saute for about 5 minutes.
Then add tomato paste and broccoliand mix, saute for a few minutes.
Add vegtable broth bring to simmer and cover for about 10 minutes, or until the broccoli are tender. Add salt and pepper to taste.
While cooking you can bring water to boil and cook the pasta.
Add all ingredients together, makes about 4 servings.
This recipe goes great with poached cod and you can use the liquid from the poached cod recipe in place of the vegtable broth.
