1/2 lb extra lean ground beef8 small (6") whole wheat tortillas1 can PC Mild low fat refried beans1/3 cup diced tomato2/3 cup PC Extra Chunky Extra Mild Salsa1/2 cup shredded cheddar or marble cheese1/4 cup chopped green onions1/4 cup sliced black olives
Cook ground beef over medium heat until brown, adding any of your favourite seasonings. I recommend Cilantro, Cumin and Rosemary. Drain excess fat from pan. In a separate pan fry each tortilla until both sides are light brown, set aside on paper towels. Heat up beans. Preheat oven to 400 F. Take two tortillas, one the first, spread 1/3 cup of refried beans on face of the tortilla. Next, spread 1/4 cup of meat, then another tortilla. Coat with 2 TBSP of salsa on top, add tomatoes, cheese, onions and last black olives. Repeat with the remaining tortillas. Cook pizza in ovn for 8 to 12 minutes or until cheese is melted. Enjoy! Makes four pizzas.
