Healthy Banana Bread

Ingredients
1 cup mashed ripe bananas1 cup sifted all purpose flour1 cup whole wheat flour1/3 cup nonfat milk1/4 cup canola oil2 eggs1 cup sugar1 tsp lemon juice1/2 tsp salt1 tsp baking soda
Directions
Preheat oven to 350 degrees F. Sift the all purpose flour, baking soda, and salt into a bowl. Add in the whole wheat flour and sugar. Add in the oil, bananas, and eggs. Mix well. Combine the milk and lemon juice; stir until a uniform batter is formed. Grease a mini-muffin pan. Bake for 15-20 minutes. Makes 24 mini-muffins.
