Ingredients
* Cauliflower, raw, 1 head, medium (5-6" dia) (remove) * Butter, unsalted, 2 pat (1" sq, 1/3" high) (remove) * Garlic, 3 tsp (remove) * Scallions, raw, 6 tbsp chopped (remove) * Goat Cheese, Semisoft, 1 oz (remove) * Sour Cream, 0.35 cup (remove) * Salt, Pepper to taste
Directions
- Steam chopped cauliflower until soft
- Mash in blender/food processor
- Mix other ingredients, and enjoy!

    My entire family enjoyed this and we will definitely have it again. With diabetics in the family, it was an excellent choice for us. I mistakenly left out the butter, and it was fine without it. - 1/19/11

    This is a great receipe. I have heard that you can also use grated parmesan cheese and remove the sour cream all together (makes the calories even less). Awesome receipe! Thanks :) - 9/24/10
