Broccoli Cheese Soup (The Best EVER!)

Ingredients
1 Medium Onion, finely chopped1 1/2 C. Carrots, finely chopped2 T. Extra Virgin Olive Oil1 Quart Chicken Broth1 can Cream of Chicken Soup1 bag frozen broccoli1# 2% Velveeta, cubed3/4 C. Skim Milk3 T. Flour
Directions
Saute chopped onions and carrots in olive oil, then set aside.

Heat broth, can of soup and broccoli and cook until heated through.

Add onion/carrot mixture and cubed cheese and simmer 15 minutes. Stir often.

Thicken milk with flour in small cup or dish. Turn soup up to almost a boil, and add milk/flour mixture.

Cook 10 minutes more.

Serve with crackers or good, crusty bread.

Great leftover!
