Stuffed Artichoke

Ingredients
6 medium artichokes, I cup of 4C 100% whole wheat breadcrumbs ( plain) 3/4 cup of eggbeaters substitute egg, 3 tbsp of grated parmesan cheese, I tbsp of parsley, 1 tsp of onion powder, 1/2 tsp of garlic powder
Directions
cut 1-1/2 inch off artichoke, then snip all sharp points off, soak in coolwater about anhour to washh all sand out. Mix beadcrumb, edd beater, oil and all seasonings together.
Dry artichokes and use mix to stuff between the leaves. Place artichokes stuffed side up in pot and fill pot to half way up artichoke/ Add 2 tbsp spoons of olive oil by sprinkling over artichokes and in water. cover bring to a boil cook for 45 mins untill tender.

    I love these... however i skip the egg beaters altogether and squeeze a little lemon juice over the top instead of olive oil. Moisture from steaming takes the dryness out of the bread crumbs quickly - 2/22/11
