Lasagna Casserole

Ingredients
1 lb ground beef1/2 tsp pepper1 package medium shell pasta, prepared4 c shredded part-skim mozzarella cheese3 c nonfat cottage cheese2 eggs, lightly beaten1/3 c grated parmesan cheese2 Tbsp parsley flakes2 large can (680 ml) Tomato Sauce1 red bell pepper, diced10 baby carrots diced (little more, little less)
Directions
Brown ground beef. Drain, sprinkle with pepper and set aside.

In a large bowl combine pasta, 3 cups mozzarella, cottage cheese, egg, Parmesan cheese, parsley, red pepper, and carrots. Stir gently. Pour into large casserole dish (or two if freezing). Top with beef mixture and tomato sauce.

Bake covered at 350 for 45 minutes. Uncover, sprinkle with remaining mozzarella and bake until cheese is melted and bubbly. Let stand for 10 minutes before serving.
