Crockpot Cheesy Potatoes & Smoked Sausage

Ingredients
6-8 medium potatoes, sliced thin1.5 lbs Chappell Hill Smoked Garlic Sausage (can substitute ham or turkey ham) cubed1 can cheddar cheese soup1 cup lowfat shredded cheese (I used GV Fiesta Blend)Medium Onion, chopped (optional, not included in nutrional calculations)
Directions
After cutting everything up, place half the potatoes in the crockpot. Sprinkle w/salt and pepper, then cover w/half shredded cheese. Repeat for remaining half of ingredients (minus cheese). Pour entire can of cheese soup on top and spread out and cover with remaining cheese. Cook on low for 8 hours. Makes 8 servings.
