½ - cup egg Beater (egg substitute of 2 eggs)1 – 6 ounce nonfat yogurt, flavored¼ - cup skim milk2 - tsp vanilla1 - cup all-purpose flour1 - cup whole wheat flour½ - cup packed brown sugar½ - cup brown sugar substitute2 - tsp backing soda2 - tsp cinnamon½ - tsp low sodium salt1.5 - cups shredded carrots (4.5 ounces)2 - small apples, shredded *peeled2 – 1.5 ounce boxes of raisins1.5 ounces chopped walnuts
Preheat oven to 350 degrees. Place 24 paper baking cups in regular size muffin tin. In large bowl whisk together egg beater, yogurt, milk, and vanilla with wire whisk. In separate bowl sift together flours, backing soda, cinnamon and salt and add in brown sugar and mix all together. Add dry ingredients to liquid stirring until mixture is just moistened. With spoon, stir in carrots apple, raisins and walnuts. Divide batter evenly among 24 muffin cups, filling each about ¾ full. Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool muffins 5 minutes, before removing from muffin pan.
