Hadass' Arugula-Tomato Fritatta

Ingredients
1 Tbsp butter0.5 medium onion, chopped2 garlic cloves, chopped1 medium tomato, chopped1 cup baby arugula 2 medium eggs, beaten Oregano, basil and other herbs, to taste
Directions
Melt the butter in a skillet; gently sauté the onion and garlic until translucent, stirring occasionally. Add tomato and arugula and sauté until arugula just wilts. Add eggs, cover and lower heat. Cook for about 5-8 minutes, carefully flip and cook other side.
