Ingredients
1 cup old fashioned oats1/2 c. packed brown sugar2 tsp. baking powder1/4 tsp. baking soda3/4 c. applesauce1 egg1/2 c. whole wheat flour1/2 all-purpose flour1/2 tsp. cinnamon1/4 tsp. salt5 tbsp. flax meal, ground1 tsp. vanilla extract
Directions
Preheat oven to 400. Grease or paper line 12 (2 1/2in.) muffin cups. Combine oats, flour, sugar, baking powder, cinnamon, baking soda and salt in large bowl. Combine applesauce, egg and vanilla in separate bowl. Add all at once to oat mixture, stirring just until moistened. Divide evenly among prepared muffin cups. Bake 20 to 25 minutes or until tester inserted in center comes out clean.

    I really like the flavor of these but mine didn't raise much and I didn't over mix. Will try again and maybe add an extra teaspoon of baking powder. - 7/11/15
