Lamb-Spinach Curry

Ingredients
4 T salted butter1.5 lg onions, (minced)1 T ginger root (minced)2 t garlic powder1 lb lamb (cubed)3 T curry powder1/4 cup plain low fat yogurt2- 10oz packages frozen spinach1/4 t ground nutmeg
Directions
Melt butter in large pot.
Add minced onion, minced ginger and garlic.
Stir onions until they brown slightly.
Stir in curry powder and cook for 2 minutes.
Add lamb and cook on medium heat, stirring constantly for 6-10 minutes or until brown on all sides.
Stir in yogurt.
Meanwhile, take de-thawed spinach and squeeze moisture. Add spinach to lamb mixture.
Cover, turn to low heat and simmer for about 35-40 minutes.

    Left spinach frozen so moisture could help keep meat from sticking. Wasn't sure where to add nutmeg, so sprinkled in near the end. Used fresh garlic and half the butter. It came out good but not overwhelming or exceptional. - 6/14/11

    Yummy! I had to add a little water to keep the meat from sticking, and I also added 1/2 cup half and half for a creamier texture. The flavoring is comparable to our favorite Indian restaurant. Thanks for sharing this recipe. - 3/24/11

    This was really easy, though it was my first time with frozen spinach - that bit was messy but I blame my own inexperience. Also, I used chicken because I couldn't find lamb. But it still worked. And, I expect we'll have it again. Thanks
