Sweet & Smoky Grilled Sweet Potatoes

- Sweet potato - 3 (about 20 oz.) - Brummel & Brown, Original - 3 tbsp - Honey - 1 tbsp - McCormick Grill Mates - Sweet & Smoky Rub, 4 tsp - PAM COOKING SPRAY For Grilling Fat Free
Wash sweet potatoes and peel if desired (I prefer to keep the skins on).
Slice sweet potatoes into 3/4" thick slices.
Boil sweet potatoes until just beginning to get tender.
While potatoes are boiling, in a small bowl combine your Brummel & Brown, grill rub and honey. Pop in the microwave for 30 seconds or until mostly melted. Stir, and return to microwave until melted (another 10 seconds or so). Remove and cover, setting aside for later.
Once you've taken out your sweet potatoes, you can head to the grill. Bring the grill to medium heat and spray the grill with the Pam. Brush the sweet potatoes with some of the grill space/ honey. spread mixture, and place coated side down on the grill.
DO NOT MOVE THEM!
Allow grill marks to form (about 5 minutes) then flip ONLY ONCE. Brush more of the spice mixture onto the side now exposed and allow grill marks to form on the bottom side (about 5 minutes). Serve immediately.
Makes 4 ~5 oz servings.
