Healing Cabbage Soup

Ingredients
3 T. Olive Oil1/2 onion, chopped2 Cloves garlic, chopped4 c. chicken broth1/2 tsp. black pepper1/2 head cabbage, cored and coarsely chopped1 (14.5oz) can Italian style diced tomatoes, drained
Directions
In a large stockpot, heat olive oil over medium heat. Stir in onion and garlic; cook until onion is transparent, about 5 minutes.

Stir in stock and pepper. Bring to a boil. Stir in cabbage. Simmer until cabbage wilts, about 10 minutes.

Stir in tomatoes. Return to a boil, then simmer 15 - 30 minutes, stirring often.

    Great stuff. I used the entire head of cabbage and added some carrots and hot chile sauce for kicks. I then increased the liquids so it would all cook well. Delicious, low-cal soup. - 1/23/11
