Ingredients
For the wrappers:1/2 cup flour (gluten free)egg substitute (powdered)1/2 tsp xanthum gumpinch of salt1/4 cup waterFor the filling:3T shrimp2T minced pork1/2 inch piece of ginger, peeled & grated 1T Dubbonet (or rice wine)1t soy sauce1T finely sliced salad onionsTiny carrot cubes to decorate (you'll need 10)Salt and pepper
Directions
Wrappers:
1. Mix dry ingredients together with a fork. Blend with water. 2. Add more water or flour until it's of a non-sticky consistency.
3. Roll out as thinly as possible between two sheets of cling film.
4. Cut with a tea cup, just before you're ready to assemble.

Filling:
Mix all ingredients together

To fill:
1. Flour an ice-cube tray
2. Line each cube-cell with pastry
3. Fill with filling
4. Top with carrot

To cook:
1. Remove Shiao Mai and place onto a plate
2. Steam in a bamboo steamer, above boiling water for 15 minutes.
