Veggie Quiche with Bisquick

Mushrooms, fresh, 0.5 cup, pieces or slices Onions, raw, 0.25 cup, chopped *Zuccini Squash, 0.5 cup *Tomatoes, red, ripe, canned, wedges in tomato juice, 0.25 cup (drained, just the tomato pieces)*Heart Smart Bisquick (mix only), 0.5 cup Milk, nonfat, 1 cup Egg substitute, liquid (Egg Beaters), 0.5 cup *Cheese: Sargento Reduced Fat Cheddar, shredded, 0.33 cup
Heat oven to 400°F.
Spray 8-inch square baking dish or 9-inch pie plate with cooking spray.
Sprinkle (precooked) vegetables and cheese in pie plate.
In medium bowl, stir remaining ingredients until blended.
Pour over vegetables and cheese.
Bake uncovered about 35 minutes or until knife inserted in center comes out clean.
Cool 5 minutes.
