Herbed Chicken Meatloaf

Ingredients
2 lb. ground chicken breast1/2 c. diced onion1/2 c. diced green/red/yellow peppers1 tsp. olive oil1 c. rice krispie cereal, crushed1 egg & 2 egg whites, slightly beaten2 T. fresh parsley, chopped1 tsp. dried basil1/2 tsp. dried thyme1/2 tsp. dried oregano1/2 tsp. lemon zest1/4 tsp. salt1/4 tsp. black pepper
Directions
In a skillet, saute vegetables with olive oil over medium heat until tender. In a bowl, stir cooked vegetables together with chicken and remaining ingredients until well mixed. Place mix in a prepared 9x5 baking dish and bake in preheated 350 degree oven for 1 hour or until meat thermometer reads 165 degrees F. Remove from oven and let rest for 15 minutes before serving.
