Turkey and balsamic onion quesadillas

1 small red onion, thinly sliced1/4 cup balsamic vinegar4 10-inch whole wheat tortillas1 cup shredded sharp cheddar cheese8 slices deli turkey, preferably smoked (8 ounces)
combine onion and vinegar in a bowl: met marinade for 5 minutes. drain
warm tortillas in a pan, for about 45 seconds, flip. add 1/4 of the cheese and cover with 2 pieces of turkey and top with 1/4th of the onions ( if you prefer, cook the onion first.. i like it better this way!) fold the tortilla in half and flatten with a spatula. heat until the cheese is melted. Do this for each tortilla.
