Ingredients
1 pound lean ground beef4 cups water1 packet taco seasoning mix4 cups instant rice1 cup reduced fat shredded cheddar cheesesour cream light (optional)1/2 pound chopped tomatoesonions (optional)
Directions
Brown ground beef in a large skillet and drain. Add water and taco seasoning and bring to a boil. Stir in rice. Sprinkle cheese on top of rice, cover pan, and simmer on low for five minutes, until rice has absorbed water. Top with sour cream, tomatoes and onions. Servings 4 to6
