Pasta and Veggie Surprise

Ingredients
Rotini PastaBroccoliOnionsCarrotsRed PotatoFresh ParsleyGarlicTomato SauceOlive OilSalt Pepper
Directions
1. Bring pot of salted water to a boil. While waiting, start to prep the veggies.

2. When water comes to a boil, add the pasta and cook till desired consistency. About 5 minutes before pasta is finished, add chopped potatoes.

3. In a large saute pan on medium heat, heat olive oil. Add onion ( chopped) and garlic. Saute until translucent - approx 5 minutes. Season with pinch of kosher salt and pepper.

4. Add shredded carrot and bite sized chopped broccoli to saute pan and cook until broccoli is tender - approx 7 minutes.

5. Drain pasta and potatoes and return to larger pot. Turn heat to medium low. Add contents of saute pan and tomato sauce and combine until heated thru.

6, Add fresh chopped parsley before serving.

Makes approx. six 1.5 cup servings.
