1 cup sugar1 cup brown sugar1 cup butter4 eggs1 1/3 cup applesauce1 tsp salt3 med bananas2 small bananas1 tsp cinnamon3 tsp baking soda1 cup vanilla rice milk2 tsp vanilla2/3 cup coconut flour1/3 cup garbanzo bean flour1 cup white rice flour1 cup brown rice flour3/4 cup golden flaxseed meal1/4 cup whole ground flaxseed meal
Cream together the butter, sugar, eggs, applesauce, bananas, vanilla, and rice milk. In a separate bowl, sift together the flours, salt, baking soda, and cinnamon. Add to the banana mix a bit at a time, mixing well after each addition. Fold in the flaxseed. Drop into lined muffin tins. Bake 10 min at 350 degrees, then switch oven racks and bake 10-15 more minutes. Cool completely.
