Lightened up Alice Springs Chicken

Ingredients
1 chicken breastSprinkling McCormick Grill Mates - Montreal Chicken2 slices turkey bacon1 cup mushrooms2 tsp honey mustard (we like Emeril's)2 slices reduced fat cheddar cheese
Directions
Sprinkle chicken breast with McCormick Grill Mates or other favorite seasoning
Sautee Mushrooms
Cook turkey bacon according to package instructions.
Once mushrooms are soft, take them out and add chicken, cook through.
Once chicken is cooked, cut in half, and top each half with honey mustard (1 tsp), sauteed mushrooms, 1 slice turkey bacon and 1 slice cheddar cheese. Cover and let cook on low heat until cheese melts.

    Used Mrs Dash instead of montreal seasoning and left out the mushrooms bc the family doesnt like them. Cooked in the pan til the chicken was done, then added honey mustard, bacon, anad cheese and broiled til bubbly! This is SOOOO good! Served w/ a side of steamed green beans. - 5/24/12

    Delicious! Had a spontaneous craving for the Outback version, hoped to goodness for a lower calorie recipe, and here it is! Really makes you realize how unnecessary it is to waste calories by dining out! - 1/27/11
