Three Cheese Chicken Penne Florentine

1 c. chopped onion1 c. chopped red bell pepper3 c. chopped fresh spinach1 T. fresh oregano or 1 t. dried1/4 t. pepper2 c. ricotta8 oz. uncooked penne pasta2 c. cooked, shredded chicken breast1 c. shredded cheddar1/2 c. grated Parmesan1/2 c. milk1 can reduced fat cream of chicken soup
Preheat oven to 425. Heat nonstick skillet over medium heat - spray with cooking spray and saute onion and bell pepper until tender. Add spinach, oregano and pepper saute until spinach wilts. Combine with ricotta, pasta, chicken, 3/4 c. cheddar, 1/4 c. Parmesan, mik and soup. Pour into a 2 qt. baking dish coated with cooking spray and sprinkle with remaining cheese. Cook for 25 minutes or until lightly browned and bubbly.
