Raspberry Poppyseed Dressing

Ingredients
Tangy Raspberry Poppy Seed Dressing * 1/3 C. Erythritol * 1/2 C raspberry vinegar * 1 tsp. salt * 3/4 tsp. ground mustard * 1 tsp. minced onion * 1 C. vegetable oil * 1 T. poppyseeds * 1/4 – 1/2 tsp. Xanthan Gum * 8-10 drops steviaMix dry ingredients and blend in the Magic Bullet (or other food processor). Then add raspberry vinegar & blend again. Pour into mixing bowl and slowly drizzle in the oil, while mixing with a hand or stand mixer. Then add poppyseeds and stevia. Next, add xanthan gum a little at a time until desired consistency is reached.
Directions
A serving is approximately 2 Tablespoons
