Italian Vegetable Soup

Ingredients
1 pound lean ground meat (venison, turkey, or lean ground beef)1/2 cup coarsely chopped onion1 clove garlic, minced1 can navy beans, drained1/2 can carrot slices, drained1/2 can green peas, drained3/4 cup chopped fresh spinach1 can beef broth1/2 cup marinara sauce1 tsp. salt1 tsp. black pepperFor topping:1 1/4 cup Bisquick1 cup shredded part-skim mozzarella1/3 cup skim milk2 tsp. garlic powder1/2 tsp dried oregano1/2 tsp dried parsley
Directions
Brown ground meat with onions and garlic. Drain. In large pot bring beans, carrots, peas, chopped spinach and beef broth to a low boil. Add meat mixture, marinara sauce, salt and pepper. Bring back to boiling.

Meanwhile, mix Bisquick, mozzarella, milk, garlic powder, oregano and parsley in a small bowl. Drop by spoonfulls onto the top of the boiling soup pot. Cover pot and continue to boil until topping is done through.

Makes approximately 8 one-cup servings.
