Tilapia Sandwich with Cilantro Mayo

Ingredients
4 Arnold's sandwich thins (multigrain or whole wheat), toasted4 tilapia fillets5 Tbs light mayonnaise1/4 cup chopped fresh cilantro1 Tbs lime juicedried thymechili powdergarlic powdersalt pepper2 cups fresh spinach
Directions
Add chopped cilantro and lime juice to light mayonnaise and combine. Set aside. Dry tilapia fillets with a paper towel. Sprinkle each fillet conservatively with garlic powder and thyme and then more generously with chili powder. Salt and pepper to taste. Cook for about 2 minutes on each side in a non-stick skillet prepped with cooking spray over medium heat. Spread cilantro mayonnaise on the top of each toasted bun and place fresh spinach leaves on the bottom bun. Add fish and enjoy!
