Mini Quiche

Ingredients
1/4 Onion1/4 Green Peppers1/2 C Frozen Spinach1/2 C Shredded Cheese1 TBS Olive Oil2 Whole Eggs4 Egg Whites
Directions
1. Heat Oil on Stovetop
2. Sautee Onion and Green Pepper until preferred tenderness
3. Thaw Spinach
4. Mix / Scramble Eggs and Egg Whites
5. Spray Muffin Tins (2 Mini pans 6 muffins each) with Pam or similar product
6. Fill Each Muffin area 2/3 full
7. Add vegis and cheese

Bake at 350 15-17 minutes
