Lemon PoppySeed Loaf

Ingredients
2 c flour3/4 c sugar4 tbsp poppy seeds2 tsp baking powder1 tsp baking soda1/4 tsp salt1 large egg1 c fat free vanilla yogurt1/4 c EVOO1/3 + 1 tbsp lemon juice1 tbsp lemon zest/peel
Directions
Preheat to 400 degrees

Whisk dry ingredients in a large bowl. In a medium bowl mix egg, yogurt, oil, lemon zest, lemon juice and lemon zest. Make a well in the center of the dry ingredients.

Fold in wet ingredients until just moist

fold into greased baking pan and bake 20-25 min for loaf and 15-18 min for muffins
