Black Beans n Rice w/Corn

1 bag dried black beans 1 onion - chopped1/4 cup brown sugar1 can corn1 tbsp Olive Oilsalt and cilantro to taste2 cups cooked (1 cup uncooked) brown rice
Soak black beans in water at least 24 hours. Change water every 8 hours or as needed.
Bring water to a boil. Add dried, soaked beans. Cover, and let simmer for 2 hours - stirring occasionally.
When you are happy with the firmness of the bean, drain and set aside.
Heat Olive Oil in large pan. Add onions. When onions are slightly browned add in brown sugar - stirring until dissolved. Allow onions to caramelize slightly. Add black beans and 1/4 cup of water. Cover and let cook for 5 minutes. Add corn, salt and cilantro. Cover, and let cook an additional 10 minutes. Serve over Brown Rice and garnish with additional cilantro.
