I 10" Whole Wheat Tortilla (santa fe brand)can of diced or stewed tomatoesBalsamic vinegar, salt, pepper and Italian seasonings to tasteChopped Onion,peppers, artichoke hearts, mushrooms1/4 cup 2% shredded cheese or fat free feta cheese
Saute onion, peppers, mushrooms and artichoke hearts until tender
Mix diced tomatoes, garlic, balsamic vinegar, salt, pepper and Italian seasonings together in saucepan, cook 4-5 minutes until reduced, blend if smooth sauce is preferred.
Use tortilla as "crust". Top with 1/4 cup of sauce. Top with one cup of sauteed veggies and shredded cheese.
Bake in 400 oven until cheese is melted and bubbly. Watch edges of tortillas.
