Chipolte-Glazed Roast Chicken With Sweet Potatoes

1 lb of chicken cut into 3 ounce servings3 lbs of Sweet Potatoes cubed into bite size pieces2 tbsp of olive oil3-4 chipotle chiles in adobo sauce minced,1 garlic cloves minced1 1/2 tbsp honey1/2 tbsp cider vinegar1 1/4 tsp salt1 tsp cumin1/2 tsp cinnamon chicken.
Preheat oven to 400 degrees. In a medium lowl, toss the sweet potatoes in the olive oil and scatter on the bottom of a roasting pan. Roast for 15 minutes. In a small bowl, mix together the chilies, garlic, honey, vinegar, salt, cumin, and cinnamon to make a paste. Rub the paste evenly over each breast. Place the chicken breast over the sweet potatoes and roast until the chicken breast is cooked through, about 25-30 minutes.

We had to guess at the amounts to use, but it turned out very well, the glazed added a nice kick to the sweet potatoes. Next time we are going to use less chipolte peppers (we used 4) and add onion and sweet peppers. - 3/12/10
