1cup diced potato1/2 fresh mushrooms (chopped)2 med. sized carrots ( chopped)1-2 clove(s) garlic (chopped)1/2 med. onion ((chopped)enough olive oil or canola oil to lightly coat bottom of panSeasoning- Sea salt, black pepper tumeric
-Heat pan add oil
-Add carrots and saute for a approx. 3-4 minutes
-Add onions, potato and mushrooms saute for until onion become slightly translucent. Add chopped garlic, cover and cook on medium to low heat until potato are tender, approx. 15-20 minutes.
-Season to taste
