Cabbage Slaw with a Twist

Ingredients
4 cups thinly shredded cabbage1 large apple sliced thin strips¼ cup chopped walnuts1/4 cup dried cranberries1 Tbsp. extra virgin olive oil½ of fresh squeezed lemon – can substitute reconstitutued lemon juicesalt to tastepinch of cayenne pepper
Directions
1.Slice your cabbage as thin as you can unless you use pre-packaged shredded cabbage.

2. Leaving the skin on slice a small apple into thin slices. It looks even prettier if you can julienne the apple strips.

3. Mix cabbage, apple, walnuts, and dried cranberries in a large salad bowl.

4. Dress with 1 Tbsp. extra virgin olive oil, lemon juice, salt and a sprinkle of cayenne pepper to taste.

5. Mix thoroughly - you do not want patches of cayenne pepper in a few bites only.

    Made this salad today for an early Memorial Day celebration and it was Delicious would definitely make this again.
    Since Cabbage does not like my BF LOL I used Trader Joe's Broccoli slaw to replace the cabbage and it was good.

    Took this to a Memorial Day cookout, and got raves! Instead of the olive oil/lemon dressing, I combined vanilla WeightWatchers yogurt and raspberry fat-free salad dressing, so the slaw was a little sweet. Used pecans since I had no walnuts on hand. Thanks for sharing! YUMMY! - 6/1/10
