Low Fat Lemon & Lime Cupcakes

1 3/4 cups white flour1 tsp baking soda½ tsp baking powder½ tsp salt½ cup unsweetened applesauce½ cup white sugar or sugar substitute1 Tbsp vegetable oil1 egg1 cup fat-free sour cream1 lemon, juice and zestIcing:2 cups icing sugar1 lime, juice and zestwarm water
Preheat oven to 180˚C. Combine dry ingredients and set aside. Whisk together applesauce, oil, and sugar.
Add egg and beat well, then stir in lemon zest and juice. Alternately stir in flour mixture and sour cream in stages, then divide among 24 paper-lined muffin cups.
Bake 15 - 20 minutes or until toothpick inserted in the center of one cupcake comes out clean.
To make the icing:
Mix the icing sugar, lime juice and zest, add a tiny bit of warm water (not too much the icing must not be runny). Pour this into the cases to top. Sprinkle with yellow and green sugar crystals if you can get hold of them.
