Low Carb Creamed Spinach

Ingredients
4 cups fresh spinach (9 oz. package)1 slice bacon1/4 cup onion1 Tablespoon soy flour or almond flour1Tablespoon unsalted butter3/4 cups half and half cream1/4 tsp salt1/4 tsp black pepper1/4 tsp nutmeg
Directions
Chop bacon and onion saute in skillet until bacon is done and onions are clear and set asside. Melt butter in skillet. Add flour stirring until smooth. Add cream gradually while stirring. Add salt, pepper, and nutmeg to mixture and cook until hot and bubbly. Add fresh spinach, onions and bacon and cook until spinach wilts. Serve immediately. Makes 4 servings.
