Oatmeal Scones

Ingredients
1 cup all purpose flour1 cup whole wheat flour1cup rolled oats3 tbsp sugar2 tsp baking powder1 tsp baking soda1/2 tsp salt1/2 cup cold butter (cut into bits)1 1/4 cup low fat buttermilk
Directions
1. In a large bowl combine flours with oats, sugar, baking powder, baking soda and salt
2. Cut butter into flour with a pastry blender or fingers until butter is in tiny bits.
3. Pour buttermilk over ingredients and gather together into a ball. Don't overmix.
4. Pat dough onto a lightly floured surface until it is about 1 inch thick. Cut scones with a 21/2 round cookie cutter or glass. Place on a cookie sheet. ( using a piece of parchment paper on the baking sheet will prevent the bottoms from browning too quickly)
5. Bake in a preheated 425 degree oven for 10 to 12 minutes.
Makes 12 to 14 scones

    Delicious! I added 1 chopped apple and 1 t cinnamon, and they turned out perfectly. The texture was more like a cake than a scone to me, but the flavor was fantastic! This is a great base recipe! - 9/18/10
